That's a natural rind cheese with organic fungus and after covered with holm oak's ashes mixed with salt. With 150 grammes per piece, this cheese has an intense but clean goat smell. Melting, smoothie and oily in the palate, with a few notes of aromatic herbs, like lavender. At the end the taste is clean and very long, reminds to fresh milk and, at the same time, smoked taste.
